Just want some positive beef!!

Beef backs rubbed with coarse pepper, kosher salt, light brown sugar, and garlic powder. They were temping 200 after 4 hours at 250 dome, so I FTC them. They came out nice!!!

    I've only attempted beef short ribs. They weren't the greatest. I think I pulled them too soon.
    How was the texture?

    amazing! everyone says 6 hours for beef ribs but I think that depends on how lean the butcher cuts them. These were from Publix, still meaty but they were 200f in 4 hours at 250f

    They look darn good. Nicely done!

    Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

    Hell yeah man those look perfect.  4 hours does seem pretty quick...but when they are done they are done.  


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    me too...I think they taste better than pork. I got 2 slabs from publix for 11$ you cant beat that
