Cooked a brisket today, a Prime from Costco. Good bark and color, great flavor, just not as moist and tender throughout as past Prime's.
LBGE & SBGE. Central Texas.

Looks great! I love that bark, got a nice ring to it as well. I bet it will set well in the fridge over night and come roaring back tomorrow! Good Stuff! The two loudest sounds in the world is a click that should have went bang and a bang that should have went click.

How long after you sliced it until you served it?

Ok. Brisket does tend to dry out if cut and left to sit a little. Did you foil at all or let it cook all the way on the egg what temp did you you pull it?
