Got this nice choice flat from Tillmans in Jacksonville. It was about 3.5 pounds and nice and floppy. St. Johns County, Florida

Fine looking piece of beef. Hope you enjoy. Myself, I'd prefer everything from a butcher shop, but, sigh, price aside, the closest good one is only open 2 days a week, and the best one in the vicinity is a minimum of 45 minutes away in good traffic.

Wow, same problem here. We had a fantastic place about 2 miles away, always packed, but they shut down about 2 years ago. I would love to develop a great relationship with the local butcher (around 6 miles away) but after a few interactions, I have sorted out that he is primarily a middle-man for a remote butcher house.
First indicator was a couple of years ago (before the local Costco was carrying packers) and I went in asked asked if he could get a packer brisket. The ensuing discussion led me to realize that I knew more about brisket cuts (thank-you forum) than he did but I ordered one anyhow.
Since then I have become a victim of SRF and all after that is downhill...
BTW-local Costco now has packers (prime) quite frequently and their regular meat selections are good enough for me-excpet when I get the SRF urge.
You never know how it will sort out. FWIW-Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
Tillmans has good stuff. But, I normally go to Freshfields Farm off University Blvd. For brisket I have a whole different source and will only get it from them unless I eventually go with a SRF.

@Spaightlabs & @MaC122But, to be fair Publix has good meat and the one I go to the butcher will give me special cuts upon request. Trick is to watch for sales and know your butcher. Stephen brisket is real good there. As to the price point I'd guess they're gonna be close if not a little lower. Their beef comes from Nebraska (
) have some age on them and all of the subprimal, steaks etc can be cut to order. They also are antibiotic etc free and grassfed.

As to the size of brisket. I normally only have 3-4 I'm egging for and I like getting a 11-15# packer. We eat what we eat and the remainder is vac sealed and saved in the deep freezer for later use in sammys, chili, tacos/burritos etc. No waste I assure you.

I agree with your other statement though...Public in my area always has something on sale and it is good quality. I just don't buy brisket there.Which came first the chicken or the egg? I egged the chicken and then I ate his leg. -
im gonna do a salt and pepper rub....that's it..put her on the egg at 270 dome. I got pink butcher paper to wrap at 165. pull at 195 and rest for an hour. my buddy flameboss100 will assist as needed. Im expecting a 6 to 7 hour cook.

Butchers are not really butchers anymore. They just break down primate and raise the price even more. For a butcher to really process meat like the old days they have to open their doors to the FDA and it's not worth it from what I have been told. I get all my meat from Costco they are better than any local butcher and cheaper.

Where are you located? Publix and Costco here in north GA are $7 a pound for a flat. Fergusons meat market north of here is $4.50 a pound for a full packer brisket which is way better to smoke than a flat. Do you have a restaurant depot near you? You can join KCBS for $35 a year and get day passes to restaurant depot and the full packers are under $4 a pound. Brisket is about the only meat I don't buy from Costco because they only sell flats but many on the forum get amazing brisket prices from Costco but not here. I buy different things from different places. The only thing I get from a butcher anymore is chicken wings the local butcher has better wings at a better price than anywhere around.

@Lit take a pic of a 4 pound brisket at Publix it might be 60$. So I go to my local butcher and I get the same for 25$ and its certified choice, a great deal. I just get so frustrated with the price of meat. I have no idea if im getting choice, select, or prime at the grocery. I support my local butcher from now on

In nearby Carlsbad, we have a very nice meat market. I've gotten spicy and mild Sausage for pizza and it was the best I've had in California.
We have many Carnicerias for Carne Asada and such, too. And the Costco sells about the best Ground Beef for burgers.
No need to ever visit a regular grocery store for meat. Rarely, anyhow. -

That market is just down the street from Shooters, which I try to stay away from.
That's just another reason to cross the river from Middleburg to spend more than I need to during a combined trip. -
