Picked up some individual short ribs, rubbed them down with EVOO and DP Cowlick. The Egg is heating up to 250 F with two chunks of hickory and a single small chunk of mesquite. They should could faster being singles I would think?

I have had single cut short ribs take up to around 6 hours to finish, running at around 260-270*F on the dome-no foil wrap. It just depends.Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

Cooked at 300 or so, probed tender after 2 1/2 hours. They are now resting while the Mac & Cheese and sprouts finish up.

@CTMike I have never smoked beef short ribs but do beef back ribs all the time. they are cheaper than pork and taste amazing. I usually smoke them at 250 for 5 to 6 hoursSt. Johns County, Florida
