If you need some pimento flavor fast, consider burning a handful of allspice berries. Before I bought the wood, I had a small canister of berries that were many years old. Worked even better than the wood I eventually used. Ridiculously flavorful smoke.

    Damn

I just got a small bag of chips a few weeks ago and have plenty. I'd be happy to give you some if you want to drop by in Suwanee, Georgia.

It doesn't take more than a small foil pack for a 2-3 hour cook.

The sticks can also be reused. I've done a half dozen cooks with them.

The owner is a good guy and if you contact him I suspect he'd let you know when he have more.

Interesting. Did you just dump the berries on the burning lump or did you wrap them in foil, punch a few holes in it and then throw it on the coals? I did the latter and then, the next jerk cook, didn't use the berries. Same seasoning, same meat (chicken). I noticed no difference between the two cooks. I did use oak wood both times though, figuring the berries wouldn't smoke much. Maybe that overpowered the allspice?

I hate it when I go to the kitchen for food and all I find are ingredients!
