The adjustable rig from ceramic grill store is awesome for multitier cooking.
For external monitoring of temp, a Maverick is good (733) or look at the thermoworks products. A thermapen is the best for instead read temps.
I buy packs of the disposable aluminum pans at Costco, but I also use a stainless drip pan from time to time.
I never use lifters for the grid or deflector - just get a good pair of gloves.

My recommendation - keep it simple, start with what you really need on a cook, Thermopen (or equivalent) and welding gloves.

Get a pair of welder gloves for lifting hot items like pizza stones or grates. Lowe's or Home Depot. A pair o' cheap gardening gloves ($1.99) will be great for cleaning out ash or moving cold grates and stuff so your hands don't get dirty. Call Tom at Ceramic Grill store and get an AR, do NOT get the plate setter or ConvEGGt or whatever they are calling it. One trick pony that the AR can do, plus the AR can do more. Adjustable height, multiple levels. Get the BGE pizza stone. Do NOT use your wife's Pampered Chef pizza stone or others. They will break under the heat. Save money and get disposable pans. Cheap and you don't have to clean. I'd skip the Maverick, get a Thermapen for now. Figure out what and how you are gonna cook and get what you need from there.

I haven't gotten a griddle yet, but BGE makes a half moon one for the large and XL. I have been thinking of getting one.
I built my own tiered grid for now, but want and recommend the AR.
I am fine with the one that came with the egg. Some have the cast iron grid or grill grates. Just something else to clean to me.
On drip pans I use foil or throw away pans, but again ceramicgrillstore.com have a great drip pan that can work with the AR. Check out their website.
I am fine with the one that came with my egg. Just make sure you use welding gloves when the egg is lit.
I have the deep dish pizza stone/pan and love it. Did a deep dish a few weeks ago and it come out good the first time, but I know I can make improvements. Just make sure to not use a lot of dough with it.
