Illegal Pastrami

So there are some huge wildfires going throughout the state of Alaska and we have had some above normal temps here with little rain. There was a ban on all private "charcoal grilles" this past weekend. Unless one is a complete idiot, it would be next to impossible to start the surrounding forest on fire and I don't really like being told by Government officials on what I can and cannot do. So, under complete disregard for the law, I cooked this pastrami up on the LBGE.
8.2 lb brisket
Brined for 7 days
Water bath for 2 days
Rub set for 4 days
Cooked for 9 hours @ 225 indirect.
I.T. Temp of 185
This thing turned out awesome. I don't refrigerate overnight and then steam. We consume it right off the grill.
Here are the results. Bottom pic is of just putting it on the Egg.

@QingEsqThe yellow cord is the Maverick cables that I have covered in a high temp sheath. It beats the hell out of wrapping them in aluminum foil and it can stay on the cables without removing after each use. Here is the link to it. Works really well.

Nice looking pastrami!
How dare the guvment infer there are "complete idiots" ANYWHERE in Alaska. I still can't believe they think anyone would "wanton waste" perfectly good meat. They should disband wildlife and fisheries too, just too much darn government. People know what's good for the environment - they're animals too!!!

@chadpsualum Here is the recipe I have always used. It is a little long winded and you have to sort through some of Meatheads ramblings but it is well worth the effort.
