First Cook
So, my new egg was delivered this morning, but I couldn’t wait. So, I took a half day of vacation to go home and play. First thing I did was to calibrate the thermometer, next load the coals. My target temp was 250, but I over shot it, ending up be 300. So, I closed down the bottom vent, but it wasn’t going down. So, I decided to put the spatchcock chicken on anyway. I kept the bottom vent closed until the temp was at 250, then I adjusted the vents. The internal temp of the chicken is 151 right now, it won’t be long.

Nice, but do not forget the beer. I really did not think the Egg would light without the cook being at least 6 beers in.Belleville, Michigan

A fluctuation of 25-50 degrees really isn't that big of a deal; it sounds like you are on the right track cooking to temperature and not the length of time on the grill! (I had to learn that lesson the hard way). Welcome to the club!

Welcome to the Eggdiction. So how did the chicken taste? It looks good. AS what @Sookie said, 25 to 50 degrees is that big of a deal. I like cooking chicken from 275 to 350 indirect or raised direct. Many methods to good chicken on here.
