Ribs - What did I do wrong?

  • A lot of good advice above. I heat it up to 300 or 325, then add wood and plate setter. Then just throw the ribs on the grate immediately. Temp usually drops to around 225. Then do 2-2-1 method with temp no greater than 250. 

    I have only used dry rub, no oil. Has worked like a charm 4 of 5 times.
