Pre-Egged Frozen Meals

My wife and I are having our first child in mid July and I'm trying to think of some stuff I can freeze for while we're too exhausted to do anything. I'm going to do a butt this weekend and freeze in 1lb bags, shredded. What else can I do ahead of time and freeze? I figure I could probably do chicken breasts easily enough that day, but anything in advance would help! Thanks all!

I've had good luck with chicken breasts and pork tenderloins. My wife and I enjoy both so I cook them quite frequently. I use my super-secret rub on both and cook them at about 325 - 350 until up to temperature.
I vacuum pack - and highly recommend a Food Saver type packer - depending on the desired end product. If I am keeping the chicken for general use, I tend to freeze it whole ... same with the pork tenderloins. Occasionally, I shred the meat of either the chicken or pork and freeze it with a bit of BBQ sauce in each packet.
Your question makes me want to go work on other freeze-and-eat meals. Good luck. Let us know how it goes. And ... enjoy the new addition to your family. My baby is 30 years old now and I have no idea where the time went! -

sloppy joe (I suppose you could egg it.) We use a modified Rachel Ray's recipe that is quite good - much better than that packet {stuff}.

Shred before freezing.
Get the work done first.
You will have your hands full and shredding before freezing will save you time.
