fried cube steak on the egg question?

Planning on frying some venison cube steak tonight. Was going to marinate in butter milk, dredge/flour and fry in some oil in the skillet. What temperature do I want the dome to be at? and do I go direct or indirect? Never fried on the BGE before. Thanks for the help. I am open to any other BGE/cube steak suggestions as well.

For frying you'll need to get the Egg hot, say around 400°+ and then see what your oil comes up to. Essentially you want the oil to be 350-375° so it doesn't burn or scaled. One thing to consider is temp drop when you fill the pan up with meat, so you may have increase air at first then bump down. Same concept as your stove, but you're adjusting air flow instead of a knob.------------------------------

I fried chicken in a ci skillet on my egg shortly after I got it; just to see that it could be done. Don't remember what temp I was at.
I recommend having a fire extinguisher at hand just in case!---------------------------------------------------------------------------------Well, "spa-Peggy" is kind of like spaghetti.
