Tropical Storm Bill vs my Tri-Tip adventure

I do realize a lot of people have more serious implications of Tropical Storm Bill to deal with.  Best wishes to anyone on the Texas cost.  The Memorial Day videos I've seen on evening news of flood waters smashing through nearby businesses and homes are shocking.

This post is merely about my tri tip experiment that I was looking forward to! 

So far I have 

1) Scruffed the surface and Dry-brined it for 24 hours.  0.5 TEA kosher sea salt per lb.
Wrapped and in the fridge


2) Made a paste of olive oil and 

 2 teaspoons garlic powder
 1 1/2 teaspoons paprika
 1 teaspoon onion powder
 1 teaspoon dried rosemary
 1/4 teaspoon chipotle powder

Rubbed it in.  Did not use all of it - eyeball'd what seemed right. 
Re-wrapped.  Back in fridge for going on 24 hours.

<------------   This is where I am now.

Next,  plan is to: 


3) Sous vide at 134 deg F for 8 hours.


4) Get the egg up to 400 - 500 for 20 min to get clean smoke.
  
Add a chunk of oak.  


5) Dry it off !!  Then, light rub of avocado oil (higher smoke point than olive).


6) Grill each side for 3 min each.

Might baste with below sauce, or might not... Haven't decided.
1/3 cup red wine vinegar
1/3 cup vegetable oil
4 cloves crushed garlic
1/2 teaspoon Dijon mustard


Target pull temp is 137 deg F.


Now, the conundrum: 

Plan was to grill this evening 8pm-ish. 
Which appears to be exactly when Austin will be monsooned. 
I'm in the hills of Northwest Austin, so maybe we won't be hit as bad as east of I-35.

I'm not afraid of getting a little wet...
argh - though I need to remember to tighten the bolts first before my next cook...

Question:  if it becomes a monsoon, and I really need to be indoors, is the best Plan B to sear with cast iron skillet?

    CI sear will work just fine if you get rained out. Just make sure you turn your over stove exhaust fan on high.

    Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.
