First full dinner cook on the XL: Spatchcock chicken and veggies.

First full cook for the wife and I on the XL. I don't get a lunchbreak at work so I always cook for leftovers.
Spatchcock chicken, petite red potatoes and green beans.
Chicken was covered and stuffed (under the skin) with a lemon/garlic/herb butter. Skin of chicken lightly sprinkled with my own personal mixture of kosher salt/cracked black pepper/garlic powder. Potatoes were halved and, along with the green beans, tossed in a little olive oil and also sprinkled with the mixture.
Cooked direct, unraised, at 400ish until breast was 160. The chicken was rediculously moist and the skin got good and crispy. I put the green beans on too early so they got a little charred. Nobody's fault but my own. In the words of Clark Griswold "It's all part of the experience, honey." Got to play with a new digital thermometer I ordered too.
