Jamaican Firewalk...what sauce works well or badly?

I just got some Jamaican Firewalk rub and am looking forward to using it in the next couple of weeks on some chicken and on some pork chops...maybe some ribs. Does the jerk seasoning clash at all with sweeter sauces?  I have Dizzy Dust as well and could use that instead.

In addition to Bulls-eye and Sweet Baby Rays I also make my own sauce which you can find here: http://www.food.com/recipe/barefoot-contessas-barbecue-sauce-123417 but I don't use as much hoisin and I add a chipotle in adobo.  It is really good, but again I am a bit nervous about the combination of jerk flavours with something "Asian-ish".

    Don't be nervous. It's just food. I use JFW regularly with my assortment of BBQ sauces. Experiment!

    Usually I don't use a sauce with the Dizzy Pig Stuff (or Oakridge). I think they stand well on their own. I feel like you get too many flavors on the food they wash each other out, or one will overpower another. But as @DoubleEgger said, go ahead and experiment. Maybe do half rub+sauce and half just rub.

    Just remember, you can always add sauce, but you can't remove it after its applied.

    We love just dry rub wings now . After a suggestion from another forum member I use Jamacian Firewalk and Swamp Venom together on my wings and it's great (if you like heat)

    my go to sauce is a habanero/honey, habanero goes good with jamaican . you could probably add some chopped fine and simmer it with the sweet babyrays

    +1 on this...I would definitely recommend with chicken trying a rub only.  Especially when you are buying the good stuff.  It is certainly fun to experiment but I would try some rub only. 

    That being said- with pork chops I bet some pepper jelly would work well.  You can just dump it in a pot and heat it and it will make a nice glaze or mix with some cider vinegar if you want it not so sweet and thick.  


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    Thanks for the inputs.  Certainly I don't mind experimenting, just wondering if people have tried combinations that really worked well or more importantly that really didn't.  Good call on the pepper jelly.  I make my own so have a bunch in the cellar.

    I like the habanero as well.  I make a jerk ham every Christmas that is very heavy on the habaneros and love it.  Jamie Oliver recipe, tweaked.

    I am making three racks of spare ribs this weekend so I think I will go Firewalk only on one, Firewalk and sauce on another, and Dizzy Dust and sauce on the third.

    Good comments already. My personal feeling is that there is a lot going on with the flavor of the meat, the seasonings, the smoke, the browning….not a lot of need to add more flavor. However, a sauce does a great job, if it is simple, of preparing the palate for what is to follow. A little sweet. A little tang. A little mouthfeel, and you are in business! A great way to introduce a little heat as well. The pepper jelly would be excellent. Enjoy!!
