I couldn't resist the short ribs

I'm a bachelor tonight due to my wife working late.  I couldn't resist the beef short ribs I stumbled upon at the store.  I hit them with EVOO and Holy Cow.  I also tried using my Stoker on the Mini Max as an experiment.  I set the Stoker for 225 and the temp went up to 240 so I closed the daisy wheel down to almost completely closed and opened the lid to let some heat out.  It held the 225 for a couple hours then started to peter out to about 170.  I shook out some ash and hit the lump again with the torch and bumped the temp to 250 which is easier to hold. One thing I did notice is some ash blowing around in the dome near the end of the cook.  I pulled them off at around 200 IT after about 5.5 hours.  The short ribs were tender, rich and delicious!  I really liked the Holy Cow seasoning on them.  I kept saying "holy cow" to myself as I ate them...not just a clever name...or is it???
