Dinner and desert tonight.

Did another PEACH cobbler. I also did 6 pounds of beef short ribs.

    Good gracious, that cobbler looks SO good. Tell me more about how you cooked the short ribs.

    It was awesome. This egg is going to make me 50 pounds heavier lol. The short ribs were really simple. I used my seasoning that I made. I cooked the cobbler first at 390 with the three legged stone, legs up. Then put the grill on it, I raised this cobbler up higher in the dome with two bricks and a pizza stone. When I put the short ribs on I pulled everything out but the grate. tossed in 2 hickory chunks with the grill at 350. Put them bone down and let them cook for about 15 mins. I then flipped them over and let them cook for another 10 mins. I then opened the egg up and hand seared them. Pretty simple. This egg is making me turn into Betty grill Crocker lol.

    I think I am getting this egg thing down pretty good lol I am going to have to get some different wood chips and chunks to see the different flavors I can make.

    I know I am in trouble lol. I found a lot more things I want to get and a lot more I want to cook. I hate you all hahahahhahahahahahahahahaha

    Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

    Not going to lie this EGG has made the cooking game even stronger lol. The cobbler is really good but I like a firmer crust then this one is. I will have to game plan it some more. Also I am finding I am going to have to plan out the cooking a little better as I use the existing lump for the next cook and wood chunks still smoke a bit so the cobbler gets a little smoke flavor that I love but my mom doesn't care for it. Thinking about doing pizza tomorrow night for dinner and doing a clean burn tm morning while I golf to cook pizza without "smoke"

    I wouldn't do a clean burn unattended unless you have a significant other willing to watch the Egg while you are on the course.

    I didn't end up doing it. To much good lump left for pizza tonight lol. Already made the dough and made my ingredients run so pizza will be on the menu tonight. Going to be good.

    Sorry been away for 23 days..... I had not used the egg in that long it was killing me. So like any egger--- Fired her up this afternoon and two chickens are getting cooked! Wahoo lol.

    Yes, the desert can be very beautiful, even though it does get so stinkin' hot, especially in the summer...
