1st meatloaf

Encouraged by all the posts that this is a forgiving cook, and having extra ground meat on hand, I did my first meatloaf. We used my wife's standard recipe, in the interest of changing only one thing at a time. We used the Lawry's meat loaf seasoning recipe with an onion and a green pepper, eggs, milk, etc. I formed them in a pan, and then put them on. The smaller one is a more plain version for a picky kid:

I targeted 375 but did most of the cook at 400, platesetter feet up. It only took 45-50 minutes, I was surprised how quickly they cooked!
They were delicious, the wife was generous with compliments and seemed surprised at how good they tasted. I was not surprised, based on what I had read here.
Thanks for the encouragement, these will go into a regular rotation!

Anyone have a good meatloaf recipe? My apologies if I missed one in an earlier thread, I have never done one and am always looking to do something new on the egg. Thanks.Birmingham, AL

Thanks @stonewh! The recipe on the back of the Lawry's meat loaf seasoning worked great, I had wanted to try some linked here on the forum but SWMBO wanted to just try her standard recipe. I'm pretty sure you'd have to work kinda hard to screw this one up...LBGE, platesetter, Stoker wifi, StokerX Mac software, Pit Pal for iOS, @HerringBigEgg on Twitter, joined forum in 2008Austin, TX

Good looking meat loaf. Really only like it on the egg.
@stonewh google "meatloaf egghead forum" and you'll get more than you can stand. -
Pretty simple, couple pounds of meat maybe a mixture of beef and pork, one or two eggs, a little milk, Panco, Parmesan cheese and some seasoning of your choice. I like to cook mine indirect at 350 with a little cherry wood. I bet the Lawry's recipe is a good one. Here is your basic meatloaf recipe I found on line. http://allrecipes.com/recipe/easy-meatloaf/stonewh said:Anyone have a good meatloaf recipe? Just through together what you like. The photos of the one below I added Blue Cheese to it.

Great looking cook. @stonewh I like the Pioneer Woman's recipe. I swap out the bread soaked in milk with panko bread crumbs. I also wrap it in bacon. I put it on the egg at 325 and let it go for a couple of hours.

How did you know when they were done?platypusrex said:

Did you cook to temp or give a slice. I like ground beef cooked through.
Will definitely add this to the mix. Thanks.

Thanks all! @SmokingPiney, I used my Thermapen, targeted 155 - 160. It definitely finished a bit while at rest. Easy peasy.LBGE, platesetter, Stoker wifi, StokerX Mac software, Pit Pal for iOS, @HerringBigEgg on Twitter, joined forum in 2008Austin, TX

Look up SGH's post on stuffed meatloaf. Several others copied it myself included and it's really good.

Nice looking loaf. I haven't done one in forever on the Egg. Now you got me craving one.

@GATABITES Nice work, looks really moist. Mine was moist but not as juicy as yours - do you slather on ketchup or whatever that is during the cook, or right after, what? Looks like you have more peppers in there than ours, that could help, I dunno.LBGE, platesetter, Stoker wifi, StokerX Mac software, Pit Pal for iOS, @HerringBigEgg on Twitter, joined forum in 2008Austin, TX

Heavy cream is the best way I have found to keep them moist.
-
@platypusrex - I smoked the loaf until an internal temp of 140-145 then added BBQ sauce then cooked until 160. I also bumped the temp from 275-300 to 350 until done. The higher temps sets the sauce and makes it really tacky.
I would suggest cooing at a lower temp next time.XL BGEJoe JRBaltimore, MD -
Yeah, lower temp with some heavy cream, then finish like that should do the trick. More testing shall be required...
