Grilled Tri-Tip with Citrus-Chile Butter


Started with a untrimmed 2.6 lb Tri-Tip. Got it all trimmed and ready for the next step as unusual.
Jackie had read an article about using backing soda to tenderize meat, it said to rub it in and leave in the fridge for 5-7 hours.

I rinsed the Tri-Tip off real good added salt and pepper.


On the Grill Grates in the BGE @ 425* for a sear rest and eat.


This is just 20 minutes, it will be resting in another ten.



Well rested in the Citrus-Chile Butter for 15 minutes.



The answer is YES it dose tenderize and well. The Citrus-chile butter was outstanding as well. Jackie's Kale Strawberry Parmesan cheese salad was wonderful as usual I love this wonderful BBQ recipe book.

Looking good as always Ross. The salad looks interesting. I've been doing a mixed spring mix salad with strawberries and red onion. Mayo, vinegar, sugar and sesame seeds for the dressing.

Nice cook, Ross. I made up some of the Citrus-Chile Butter after your post from a couple of weeks ago, or so. It went really well with the SRF center cut tenderloin I cooked (which I guess really didn't happen, 'cause no pics).

About 10 years ago, when I lived in Wisconsin, myself and some co-workers bought a cow on the hoof. We ordered some extra tri-tips from the packer. (Get it?? Wisconsin? Packer? Har) My co-worker from California suggested it, and my SU (spousal unit) also said he missed some good tri-tip. I grilled them at the time. On a gasser. I didn't get it.....
Until NOW. Hats off. Beautiful cook.
