I took a fresh chuck roast, and double ground it with my grinder. Then cooked the meat with my home made tomato sauce and basmati rice. Stuffed the peppers and topped with cheese. Cooked indirect at 275 for 45 min. Peppers still a bit crispy but cooked perfectly!!
For the lamb, I squeezed some fresh lemon and sea salt they turned out great!!!

I am in Hamilton Ontario...
Canugghead, I only buy my lamb spiedini from one place. I driver an hour each way to get it. So I usually buy 5 boxes to last the summer. Here is their website
