Victoria Day up here in Canada and we had a nice day with the family by the pool.  Made some fresh stuffed peppers and topped them with some smoked cheddar!! Added some strip loins and some lamb spiedini as well.  Good times!!

I took a fresh chuck roast, and double ground it with my grinder.  Then cooked the meat with my home made tomato sauce and basmati rice.  Stuffed the peppers and topped with cheese.  Cooked indirect at 275 for 45 min.  Peppers still a bit crispy but cooked perfectly!!

For the lamb, I squeezed some fresh lemon and sea salt they turned out great!!!
