Honey Smoked Almonds

Youch! These were really good. I finished a batch of beans this afternoon and my Egg was cruising at 250º with some apple chunks still smoking gently, so I mixed about a cup of almonds with 2 teaspoons of honey and about ½ teaspoon of Pineapple Head and a quick sprinkle of Raging River. Put them on the Egg for about 50 minutes. The almonds came out with a professional-looking glaze, and tasted spectacular. Crunchy, slightly sweet, slightly smokey.

There's salt in the rubs (Pineapple Head and Raging River), and that's all I used. .

It's great to hear from you, Gary. I hope things are going well, and that you are still in the same area. I wanted to sign up to cook at the Toronto Eggfest this coming June 13th to reconnect with whoever's around these days, but I unfortunately have something else that day.
Now that I have become completely comfortable with my new lifestyle, I can return to this forum as a source of motivation and inspiration, rather than as a reminder of all the good stuff I am missing out on!
