Cinco de Mayo celebration

Realized a celebration was in order about 1030 this morning.  Already had plans for this evening so the rush was on.  Pulled some chicken out of the freezer and threw it in some hot water to thaw.  Went outside and fired up the Mini Max.  Luckily we had some avocados, peppers and onions.  Put my son to work mixing up some masa for tortillas and chopping veggies.  I mixed a marinade of EVOO, Lime Juice, Garlic, Cilantro, salt and Chili Powder and mixed up a rub with some taco seasoning and fajita seasoning for the chicken.  Sautéed the Green Peppers, Onions and some Mushrooms in some of the marinade.  Mixed up a quick batch of guacamole with some avocados, onions, tomatoes and tossed it in some of the marinade.  Sliced some cucumbers and threw them in the rest of the marinade.  Rubbed down the chicken and threw it on the egg while my son cooked the tortillas.  Had it on the table by noon.
