Carnitas for the Fight

One of the neighbors is having a watch party for the fight so I am trying my hand at carnitas. Last night I sliced 2-8+# pork buts and placed garlic cloves in them, put then in zip lock bags and added 1/2 gal of OJ for marinade. This morning at 8 drained and rinsed the PB's, slide them in two about 2" chunks or so. I added a rub I will post latter, put the chunks in CI DO'so with an October fest beer, water and half a squeezed orange. Not all of it would fit so the rest I put olive oil on and a
dded the rub. I got the egg to 300 and put the 2 DO's on and the PB to cook. They went on around 10:40 am. I forgot to take the lids off before my son's T-Ball practice so when I got home the PB in the DO'so were at 195 to 205 and tender. I have pulled them and I have double wrapped the whole PB and cranked up the heat to get it done. I am now roasting veg for salsa and guacamole.

That sounds wonderful - and I'm ready to try a butt some way other than NC barbecue. Was thinking something Cuban, but this would work. I like the OJ idea. Garlic too. Looking forward to your spice mix.
As for the fight, I haven't known who was fighting (or known anyone who did) since the Thrilla in Manilla.
I hate it when I go to the kitchen for food and all I find are ingredients!
