Prolly not that interesting for most but I thought I would post for the ones that I know play with different ways of eating zucchini.
Mixed up some shredded and squeezed zukes,cheddar,onion, panko and 1 egg. Made balls and stuck in the freezer for a bit.
Then cooked on a preheated CI griddle. These things were awesome if you are a zuke fan

looks awesome thanks for the idea. I assume you did salt/drain excess liquid out of the zucchinis after the shred? I have found this to be key with cucumbers when making tzatziki - but curious how you do it for zucchiniColumbus, OH
