Pork Tenderloin, Happy Nancy Style

Got a sample from Dizzy Pig of their new Happy Nancy spice blend. Brined a little pork tenderloin with some salt, water, Agave syrup, a splash of cider vinegar and Happy Nancy, with a little more of the rub after brining. Put it on the Mini at 325ish until 143ish internal. 

 

Served with parsley cheddar mashed potatoes, and some local asparagus on the side. Yum. 

 

Happy Nancy is a nice light spice blend, I think another winner from Dizzy Pig.

    Looks great. I used my Happy Nancy on 2 tenderloins as well. I should have used it all on just 1 instead of stretching it to 2. The flavor was great, just wished there was more of it.
