    <p />Salmon,
I have had my best luck with thick sliced.[p]Mike

  • Yo Rick, Out of "all" the ribbons I have won over the years, one I most proud of is that third place ribbon I won in the micellaneous category at Raytown, MO two years ago. I cooked up $2.oo worth of sliced bacon and turned it in. :-) Some people cooked more expensive entries like prime rib, pork loin and tenderloin, rack of lamb and your favorite, salmon. I took third with bacon.[p]Dad used to do pretty good with salmon steaks in the various open/miscellaneous/any thing butt category. He received several 180s for it too. I haven't had his salmon steaks since Dad's been gone. I have the recipe, I am just too tight to buy fresh salmon steaks.[p]I haven't had a chance to cook in the "extra" category since that 2004 Raytown contest, but I would cook bacon again. I do know that last year's third place winner at Raytown cooked bolog[p]Pilsners,[p]Juggy

Juggy D Beerman, I've been wanting to do it ever since you took that third place. I was thinking about doing the bacon in Lenexa this year. I was planning on bending your ear about it more at Sugar Creek next month.[p]Rick

  • Squeeze,
its been my experience (albeit limited) that by the time the judges get to the anything butt category (assuming its the last turn-in of the competition), that they are frankly tired of meat, no matter how good it is. ...so. . ..go with dessert. . .. i'm betting the chocolate chip kahlua cake would be KILLER if presented well, maybe even served with a little choco ganache or even a drizzle of hershey's choco syrup. . ..last year at new holland, most of the top prizes in anything butt went to desserts . ..spawn finished 7th out of 56 teams with her brownies, and i know at least two cheesecakes finished ahead of her. . .she also took first place in the kids q the night before with the same thing, and got quite a few "9s" from the judges. . ..so, i would go with dessert (unless there is a separate dessert category then try something else). ..HTH. ..max[p]DSCN1290.jpg

  • GrillMeister,
yep, baked on the egg at 350 dome temp indirect on grid over inverted plate setter. .. .ghiradellia brownie mix with some added choco chips and maybe some other enhancements (spawn won't reveal all her secrets). . .the bed was 4 bars of shaved dark chocolate with a final sprinkle of shaved white chocolate. ..it was a great 'box' . ..

    mad max beyond eggdome,
Hey max, that is a good idea, they are also having a dessert contest and Tammy should be coming along. We too have been playing with the chocolate chip kahalua cake substituting Andies Candies crumbles for the chocolate chips. It tasted like a super moist Girl Scout Thin Mint. Man was it good. Spawns dish looks pretty tasty as well. Hope all is well.[p]-Kevin
