DH made dinner tonight: a methodical process which he started last night of rub, rinse, cold smoke, braise, bake and finish on the BGE. Grilled pineapple and purple slaw on the side. Good eats!

You mean these deets?
Rub: brown sugar, salt, 5 spice, cayenne. Let sit overnight before rinsing.
Cold smoke: 5 hours with apple wood.
Braise: 1 hour in a boil with onion, garlic, ginger and Chinese peppercorns. (This made such a tasty broth after simmering the ribs that I strained it and will save it for another use.)
Cover and bake: 1 hour, covered, in a sauce of brown sugar, sherry, garlic and ginger. (Original recipe also called for ketchup and soy, but this was omitted.)
Finish and glaze: raised direct, open, basting.
