big chicken. I spatched and removed the skin from the breast only
dusted it with a bunch of stuff and put it on raised direct at 400. It didn't take long for the leg quarters to separate. I hit the breast with Trader Joe's sriracha bbq sauce a couple of times after 30 minutes. I like that sauce - nice sneaky heat.

I had never heard of spatchcock until I bought an egg and started hanging out here. I like it better, easier to deal with, comes out great. Almost as bullet proof as a pork butt.THANK YOU FOR YOUR ATTENTION TO THIS MATTER

Did one for lunch yesterday. Yours looks great.Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given a Mini to add to the herd.
