Cooking night

About once a month we get together with some other couples and do a cooking night. There is always a theme. Usually a country. This month was China. I did Char Siu (Chinese BBQ pork).  Turned out great. I cooked at 350 for about 50 minutes turning and basting with reserved marinade every 15 minutes. Used pork loin.  Next month the theme is cooking with alcohol. I would like to do something unique with IPA or Stout beer. Any ideas?
