OK, my spatchcock is in process. This is the first time I have gone raised direct for an extended time, no BBQ guru.
I did not expect my top and bottom openings to be the same as raised indirect for the same openings. I expected the direct to be hotter, so I started with my airflow pinched down more than my raised indirect cooks w/o the guru. I had to open up the air-flow to get her up to temp to throw the meat on.
