Tacos for dinner - homemade tortillas, non egged

SWMBO made tacos with homemade tortillas for dinner.  Quite tasty. Love some tacos with chipotle tobasco.

    Looks good. Every time I tried homemade tortilla = disaster.

    We make a different type shell, but those look good too. Care to share your recipe? 

    I like that Chipotle Tabasco too. That's the only Tabasco I'll eat.

    I'm no expert. This was our first time. We burned a couple. Seems that the trick was to get the cast iron griddle hot on medium low and flip the tortillas multiple times...30 seconds or so per side.

    Flour tortilla recipe was:
    6 cups AP flour
    1Tablespoon baking powder
    1Tablespoon Kosher salt
    1 Cup shortening
    2 cups very hot water (just lower than boil).

    Mix the dry ingredients
    Cut in the shortening
    Mix in the water until a ball forms
    Knead dough for 4-5 minutes (we did all this by hand)
    Let rest for 20 minutes. 

    Makes 24 or so taco sized tortillas. 
    Divide the dough and form into balls. 
    Then press the ball flat with your hand and roll out to desired size/thickness. 
    Griddle on medium low heat 30 seconds then flip.  Continue griddle get 30 seconds and flip for 2-3 minutes. I tried turning the heat up a but they burned so we decided to take our time.
