Jump in, a brisket is not difficult if you listen to the masters! The BGE makes it much easier other grills. I have one on now that has been going since yesterday at 5pm with some nice white oak chunks and can't wait to cut into it!LBGE

I was the same as you - had never really had brisket cooked/ smoked the Texas way. Had a couple in the over that were meh. BUT, when I did my first on my egg a few years ago - holy wow! So freakin' good - I then became a huge fan. I have done many since - and have had folks proclaim "best meat ever" more than once (so which was actually best?).Lovin' my Large Egg since May 2012 (Richmond, VA) ... and makin' cookbooks at https://FamilyCookbookProject.com
