Hopefully it will help with my trimming technique. Thanks for the recomendation @cazzy . I love that the brand is Dexter. That's funny to me.

It's supposed to be a great knife for trimming larger cuts of meat such as brisket, ham and the such. @cazzy posted a picture of Franklin using a knife that looks just like it if not the same while trimming a brisket.
If it works for @cazzy one of the more talented cooks I "know" by being on the forum and works for Franklin, I'll give it a go.I raise my kids, cook and golf. Happy to help boss! Congrats on the new knife. It also works great for ribs and sausage. I have also used it with poultry and steaks too.
It is very sharp so use proper knife techniques. The scallops really do a great job.Just a hack that makes some $hitty BBQ.... -

The scalloped blade is better for carving through bark and not screwing it up. I have a victorinox granton edge slicing knife (basically no scallops) and it doesn't even come close. Yes, @cazzy nailed it. The serrated blades cut through the bark and crust in bread much better than even scary sharp Japanese steel. Use the right tool for the job.
