Afternoon appetizer: Oysters and Moscow Mule
Seared Scallops on spinach, with warm bacon champagne vinaigrette dressing:
Finally, a ribeye, on the cooler side of medium rare. No reverse sear. Thought the fork could get in on the action

The grill was raging hot and I was trying to snap a pic and I have NO idea what I did with the camera!
@wybbqer sure thing. I adapted it from http://www.chow.com/recipes/11445-spinach-salad-with-warm-bacon-vinaigrette
We cut a few strips of bacon into 1" pieces and cooked them in a skillet. Remove the cooked bacon and drain most of the fat. Saute about 1/4 c diced onion. (Shallots would have been better, I didn't have them). Then add 1/4 c red wine vinegar, 1 Tbs dijon mustard, 1 tsp brown sugar. I did this ahead of time, and it thickened a lot, so I turned the heat back on and added about 1/2 c of champagne to thin it out. Toss the warm dressing with the spinach to wilt the spinach a little, and we added candied walnuts.
