Quick Lent Friendly lunch for one

I wasn't sure what to have for lunch today so I fired up some Mahi and foil potatoes on the Mini Max. I think I was trying to compensate for the donuts I had for breakfast. Okay now back to March Madness work. It's nice working from home.
