Being "Hospitable"... certianly pays off!!

<p />While having some brick work done... I decided it would be a good time to do some Barracho's![p]I can't say for sure...but I'm thinking...a happy crew does better work!![p]
Method:[p]I did the first three hours on the Egg in the Dutch Oven...[p]1 hour boil...two hours...no lid with light smoke...finished in the Crockpot approximately 8 hours.
(Crockpot: pre-heated to high...then switched to low.)[p]I added a couple three diced Jalapenos, and a red bell pepper.[p]P1010063.jpg[p]BORRACHO BEANS [p]Borracho means drunk, and it refers to the beer in the cooking liquid. If you're cooking beans and pork roast at the same time, you can use the fatty pieces of pork that you remove while carving to add flavor to the beans. Otherwise, use some bacon.[p]2 cups dried pinto beans
4 cups water
1 can beer
1 clove garlic, minced
1/2 onion, finely chopped
3 sprigs epazote (optional)
1 tablespoon guajillo chile powder (ground chiles)
1/2 teaspoon ground cumin
1 cup finely chopped fatty pork scraps or bacon
One 15-ounce can of tomatoes, chopped
1 teaspoon salt, or more to taste [p]Sort the beans to remove any stones or grit. Rinse the beans in a colander and place in a large pan with the water and beer. Add the garlic, onion, epazote (if using), chile powder, cumin, pork or bacon, tomatoes, and salt.
Boil the beans for an hour and then reduce to a simmer and cook over very low heat until soft (12 hours in crockpot or other slow cooker works best). Keep the level of the broth a good inch or so above the beans, and add more water as needed. Serve with broth in a bowl as a side dish. [p]Makes about 6 cups.[p]Legends of Texas Barbecue Cookbook

    As a contractor I always liked appreciative clients.
    Far too often many clients think because their paying you they own you. Maybe it's just a west coast thing.

    When I read your post and saw "Hospitable" my first thought was you are building some sort of place to go just before you kick the bucket. Then I looked it up and concluded that it means you are just a nice guy. I can go along with that.[p]Meanwhile I saw your posts above and sounds like a deal to me. I was in H.E.B. yesterday and picked up a butt to put on the Egg tomorrow. I have it soaking in some Bad Byron's Butt Rub that GrillMeister (wherever he is) gave me some time ago.[p]Plus, I've got some chicken parts to put on Baby Huey in the next hour.     My son may finally buy an egg, at my urging. He told me he doesn't think they could be good smokers. lol
