Recommended side dish
It is sitting in the fridge with Dry Rub on it.
Tomorrow I will smoke it for dinner (and leftovers for pulled pork sandwiches and carnitas tacos.)
I also have some leeks to use up, so I'm going to make a Leek soup.
What do y'all recommend as a 3rd dish to go along with the soup and slices of pork butt?

Baked beans maybe? Or French fries. Would never have considered leeks with bbq though. Then again, I have never actually sliced pork butt.
I hate it when I go to the kitchen for food and all I find are ingredients!

I would have said baked beans as well, except for the soup. BB is probably my favorite side to go with pulled pork, just not sure how it would go with leek soup.Carolina Q said:Baked beans maybe? Whenever I smoke a Boston butt, I always slice off some of it for dinner.Carolina Q said:Baked beans maybe? Or French fries. Would never have considered leeks with bbq though. Then again, I have never actually sliced pork butt.
It's like a pork roast.
the rest gets pulled and chopped after it has cooled down, then individually proportioned and into the freezer. That way, I only have to thaw the amount I need for a pulled pork sandwich, or to make tacos or enchiladas or something for dinner for three.

A nice pasta or potato salad would be good with the butt.------------------------------

Potato salad. Has to be served cold!

OK, you kinda win. But as I don't want to make cornbread, I'm going with the bread theme and will just make some garlic bread. The soup is loaded with veggies, the meat speaks for the proteins, so I think a little starch will round out the meal nicely.DMW said:Cornbread. That may have been influenced by @WeberWho?'s post.
Thanks everyone for all of the suggestions. Next butt, I probably won't be making leek soup (wife bought some leeks and I had to use them up before they went bad).
Last night, I actually took asparagus, wrapped it with leeks, then wrapped it with bacon. It was deliciouso, but I know, I know, no pics so it didn't happen.

but a warm coleslaw (redcabbage with bacon and walnuts and champagne vinegar) would work nicely as a sideCarolina Q said:
