I'm gonna make this tomorrow. If I'm using dried beans how many lbs should I sub for the cans?middle of nowhere- G.I. NE

YES!
This is similar to a Smoke Chicken Chile recipe from Eggtoberfest 2014 that I've made a number times.
I cook 7 Chicken Thighs w/ Jamaica Fire Walk for that recipe.
I think I could eat it seven nights a week. Add a couple Mrs. Shupert's Yeast Rolls and all is well in the world!
The bad news is I had the last of it last night!New Albany, Ohio -
The Eggtoberfest recipe did not have the Cilantro but did have Chile's and Chopped Jalepenos.New Albany, Ohio

I find that generally dried beans expand by 3x. So 1 cup dried will make 3 cups cooked.tjosborne said:I'm gonna make this tomorrow. If I'm using dried beans how many lbs should I sub for the cans?LBGE

So one lb should equal 3 16oz cans then?middle of nowhere- G.I. NE

@jaydub58
I use the Cooks illustrated recipe as a base. http://www.tastebook.com/recipes/974460-Simple-Beef-Chili-with-Kidney-Beans
I'm on my phone, so hopefully the link works.
If not, Google it and select the tastebook site, should be the 4th result down. I do 1/3 cup of chili powder and double everything else, spicewise. I first chop up 4 or 5 pieces of bacon and then brown the veggies in the grease. I only add 1 can of rotel along with the crushed tomatoes, then I add 1 beer and chicken stock to make up for the volume difference. I also add extra Cayenne and a jalapeño.

It turned out real good, I'm glad i tried it. That lime in the background really set it off.middle of nowhere- G.I. NE
