First Overnight Boston Butt

Woke up at 2 am to throw a butt on the BGE. I am hoping this baby will be done around noon. What IT should I look at pulling (195?)

203-205 seems to be the consensus temp.

I start checking at 195. If bone-in start wiggling the bone at 195. If it slides right out she is ready.

It depends on the butt, but mine seem to finish in the 200 - 205 range.

+1 on that 195 you better be checking it. Stick something in it, if it probes like butter, you're good. Or bone getting loose, you're good.

It is a 4.5 lb...it is boneless.

My only other butt stalled at 145 for quite some time. This already surpassed that in 3 hours.

Just cooked one on Tuesday that stalled at 165. You're in good shape. If it starts to be a time crunch you can increase the temp to 275-300 and drive it home.

It'll slow down as IT approaches grid temp. You can still bump the temp toward the end if you need to speed up.

Tend to double foil wrap once I hit the stall which is at 155ish. Then I cook to 200 is and then place in a cooler for an hour in the foil and wrapped in a towl. This has served my well over the years, but I've never actually cooked a butt on BGE. I have done tons this way on my ugly drum. hope it helps
