Pork Chops with Apple Cranberry Glaze

Last night I tried to replicate a dish from one of my favorite local restaurants.  I started by brining some thick chops in water, salt, sugar, garlic, apple cider, bay leaves, thyme, black peppercorns and allspice.  After the brine, I seasoned them with kosher salt and black pepper and egged them direct at 400 degrees to 140 IT.  I made a glaze with apple cider, apple sauce, cranberry relish, and maple syrup.  Bad news for the restaurant....I won't be ordering their dish anymore.
