I wanna make Juicy Lucys...tips?

I've never made them before. Can someone please explain the process to me? I'll be cooking them on the Egg obviously!

Whats a good kind of cheese to use?

I could also use a good sauce recipe to use instead of boring old ketchup. Something that goes good with caramelized jalepeno and onion.

Any input is welcome and thanks a bunch :)
