Chicken Capreasa and Chicken Stir Fry

Doing the chicken for tomorrows dinner and some lunches. Chinese will be for tonight. Doing a marinated chicken stir fry with onions and peppers with fried rice.

Chicken Caprese is looking good... I cheated and had a bite. Man it was good. If I had some fresh basil, I'd slid a piece in there too... This will be a great meal for sure.

Added the sauce...
Pretty good.. Wished I would have thickened the sauce a little more. Was going for something not too thick, however I didn't get enough.

@Mattman3969, I didn't really use a recipe, I just had some ideas. So, here goes what I can think of.Marinade for chicken.. These are estimates..1/2 cup soy sauce2 cloves garlic (minced)1 teaspoon minced gingerCracked pepperGreen oninonsteaspoon of canola oilWarmed the canola in sauce panAdded garlic and gingerAdded soy and pepepr and brought to a simmerAdded green onionLet cool and add to chicken once cooledSauce1/2 soy1/4 brown sugartablespoon chili pastetablespoon oyster saucetablespoon hoisin sauce1 Green oniontwo cloves minced garlicteaspoon minced ginger1/4 cup chicken stock (get no sodium (I failed to do so and it was a tad salty))Canola oil (teaspoon)Sometimes I add orange juice, but not this timeHeat oilAdd garlic and ginger, stir till aromaticAdd soy sauce, hoisin, oyster, chicken stock, and brown sugarBring to a simmer and let reduce someAdd green onions at lastThen just cook in wok with desired veggies and finish with the sauce.. I didn't use any corn starch with the chicken as I wanted a loose sauce.------------------------------

Almost forgot to mention the cutting board I was given. My brother made this for some reason a long time ago. Why, I have no clue as he really doesn't cook.
It is made from cherry. It's not end grain like my other, but it will do. Figured I'd leave it at the egg.
A little mineral oil and it looks great.
