Looking good. Have yet to try and do my own. Are you using an Amazing Smoker tray?Large and Small BGECentral, IL

Working on my second batch now. First was so amazingly good that I had to have more. Also curing up some buckboard bacon and some tasso ham. And I did not use an Amazing Smoker tray. Just smoked at around 250 degrees with apple wood.
