I plan to make the marinade Thursday, prepare the chicken and marinate Friday to Saturday and cook Saturday for dinner.
More pics and reviews to come.
I can't believe how fragrant the pimento sticks are! And the two sauces were giveaways.

Cool! Does the wood smell like allspice?
I hate it when I go to the kitchen for food and all I find are ingredients!

I just went to the pantry and smelled the Allspice.I then smelled the Pimento.The difference?The Pimento had a much greater depth of character and aroma. In comparison, the Allspice smelled like a weak Coca-Cola out of a fountain when the syrup was running low.Disclaimer: i'm not sure how old the Allspice is.New Albany, Ohio

@THEBuckeye my local BBQ store carries the the pimento wood in the bag, its $30 Canadian.

I have used those chips. They are STRONG. I go a little easy with them as a result. But they sure deliver. Jerk on the egg is awesome. Direct around 375 is what I do.Winnipeg, Canada

@THEBuckeye My order arrived yesterday. I did not order the sticks. They gave me the jerk seasoning, leaves and chunks as a sample. As soon as the snow melts I plan on smoking some wings.
