Fluffy omelet

I love fluffy omelets. The sight of it makes my mouth water no matter how full I am. I've tried many methods but they don't come as expected. Can anyone share some methods by which I can make them fluffy???

no added liquid makes a thin omelet. added milk makes them more fluffy looking but a little heavier in texture, water makes them really fluffy but only add a little

Add milk and beat in a bowl. Then as it starts to cook use a flat spatula to scrape the bottom of the pan towards the center building a fluffy mound. Keep the eggs moving.Richmond and Mathews County, VA. Large BGE, Weber gas, little Weber charcoal. Vintage ManGrates. Little reddish portable kamado that shall remain nameless here. Very Extremely Stable Genius.

I love an omelet so thin it looks like a crepe!
That's how I make them.
When I see a fluffy omelet I get full just looking at it. Fluffy omelets usually have brown bottoms and that just kills the egg taste. Omelets should be yellow!

I know, I know...why the hell did I reply to a fluffy omelet anyway?! To each his own. I get it.
Thin omelets I think just give a greater balance of the egg flavor and the ingredients you stuffed it with!

Use a good non stick pan, add some heavy cream to the omelet. As the bottom cooks, lift with a spatula and tilt the pan to put the uncooked egg under it. Walla. Fluffy omelet.NW IOWA

I follow Alton Browns method. But it is a thin French omelette. So much better in my opinion!

You could always fluff with brisket and pork butt. I think the rendering fat would add the elevation.
