Stuffed Boneless Pork Chops FTW!

Took advantage of a great sale at Costco on some boneless pork chops... made for a fantastic dinner direct from the Egg tonight!

Boneless Pork Chops, stuffed with Apple+Pear+Rosemary+and Sage... Dusted inside and out with a lightly brown sugared cajun rub (homemade).

Cooked indirect (PS, legs up) @ 400-450 for about 30 minutes, pulled at 135 internal, covered with some more of the stuffing that was nuked for a minute, foiled, and rested for about 15 minutes while I switched over to direct in order to grill up some Lemon-Pepper Asparagus.

I would say probably the most moist piece of pork I have ever had.  Wife agreed - just looked up and told me to write down whatever I did so I can do this again, and again (I just started actually documenting my cooks, so its nice to have her around to remind me sometimes :)).

All and all - another win for the new Egg!
