A Brisket a tasket, vittles for my pik-a-nik basket...

First packer on the.XL BGE..very excited. Getting temp. set as we speak.
225°...10.59 #'s. Figgerin about 14-15 hrs. Allnighter....just S&P 24 hrs prior and a sprinkling of red pepper flakes for a lil heat.
Believe it or not found this at wally world for 3.89#. Was hesitant but it was thick very marbled.and as limp as a drunk sailors pecker. So what the hell. Wet aged it for 2 weeks. Looked killer when unveiled. Going apple chunks. Burnt ends here we come.stay tuned!

    Full load of Rockwood lump up to the plate setter. I know from past shorter smokes this is a gracious plenty but am more curious than anything to see what lump is left. My bet is 2/3 left.
    Going fat down to 165 then crutch it til 195ish..Butta probe. Then rest it 2+ hours in a cooler. While the burnt ends finish.
    Can't wait.

    Crutch is typically used when trying to push thru the stall to make a deadline. But, to plan on a crutch....no.
    Better on a brisket to roll L&S the entire way to get the breakdown needed for like buttuh throughout the entire cut. That's just my opinion though.

    Sorry if this is a dumb question, but what is a crutch?  I've not done a brisket before and am thinking about doing one for my husband's birthday party.  Thanks :)

    @Sookie‌ Crutch is to wrap in foil causing the meat to more quickly rise on IT or to basically push thru the stall which in some cases can be a couple or more hours. I personally think brisket benefits by leaving it alone and letting it do it's own thing. Better bark, color and overall texture. IMHO but YMMV. ;)

    Sorry to bust balls....but, it would appear you have the probe in the point. Recommend this be repositioned to the thickest part of the flat.

    Damn this rockwood does in fact burn hotter. Got this shut down almost twice as much as with royal oak.. stuck at 225 ish ..perfect

    I've also noticed I've had to tighten it up a lil more with the Smokeware cap...love it..saved 3 pouring rain cooks so far...well worth the cost

    400 am.....crept up to 259 at the grill...made a lil adjustment....no peeky....smells unbelievable. IT 158 °..

    I can smell it from New Orleans.  (in my mind).  Thought crime.  Sounds good.  I'm sure you'll let us know how it turns out, the flat will be the litmus test.  You already know that, when it's buttah, it's dinnah.

    My dad loved nawlins.....he frequented the locals jazz bars..out of the 1/4 .said thats where the real music is..man I miss him...here so quiet..smell of smoke..He loved smoking.

    Keep them memories alive. He sees and smells that smoke. Throw on a cd for him. Love that jazz. And the blues. I'm from the motor city. Live in cincinnati. Need to fire up my breakfast smoke
