First pork butt cook in pics

I have my first pork butt on the Egg. 2 pcs for a total of 18 lbs. I cleaned the Egg out completely and loaded it up with RO, pecan and apple chunks with hickory chips throughout the lump.
I got up early with my trusty Egg partner and got the it fired up.
while the Egg was settling in I prepped the pork. I used some good Ole yellow mustard with homemade rub.
got the Egg dialed in at 250 dome temp and put the pork on with a Maverick in 1 butt, a plate setter with drip pan.
closed the lid feeling confident I left the supervision of the Egg in good hands!
