Work has been insane. So much to say and so little time to say it! Holidays were good--convinced SWMBO I needed another large BGE, bless her heart, it took her a day or two to get her head wrapped around the idea. Next thing I knew she was asking me if I was ready to go get it. So, I am now the proud owner of two large eggs. This has come in handy! I can smoke on one and grill on the other, etc. You guys know the benefits, will not go into all that. Some things that I have done--over the holidays, I did two bone in standing beef roasts that came out stupendous! I also finally embraced bone in turkey breasts--I cannot believe how late I was to that party! I actually made my 16 year old son do the last one---start to finish! He did an outstanding job! I stood in the background and offered advice as needed--he chose what marinade to use on the bird, how long to let it sit, etc. I then had him clean out the Egg and then build the fire, letting him choose which wood to use and setting the thermometer and watching things. He opted for apple and a little hickory. Again, I was proud of my boy. He kept saying "dad, this is fun!". Of course we all know that 
I need to open a store--I have sold two eggs. My brother bought one and my old college room mate bought one as well, based on my Facebook posts. Too funny! My brother is in heaven. Have not heard from my friend yet.
Hope everyone is doing well! BTW, I did meatloaf tonight, but since the holidays are over and we are cutting back on fat and calories, I cut the amount of ground pork in half and used a lean hamburger mixture. It was edible

I believe I'm becoming OCD. Can you become OCD? Anyways I really want another large partly so that both can be smoking, side by side at the same time. @johnkitchens maybe you can help us out once your table is built?

I added my second large a few months ago. I love having two eggs. It has been a game changer for sure. I should have my table in a couple of weeks. I can't wait!

Here is a shot of the Eggs on the deck. The older one is in the back. I did opt for the composite shelves on the new one (foreground) as I thought they would be easier to clean, etc. So far I am liking the composite.
I finally decided "this" was my hobby--grilling and smoking. I have been enjoying it for years and just decided WTH, My oldest brother does wood working and I thought I would try that at one point--all I can say is that when I attempted a woodworking project, it looked like a bunch of drunks got together...plus it frustrated me.

Oh, a picture of the bone in beef rib roast. Holy mother of all things right in the world, it was freaking delicious! I used the forum as a starting point for recipes and sort of came up with my own method. I used salt and fresh black pepper on it, I love spicy and it was hard to not grab a bottle of something else. I used one chunk of hickory as I did not want to mask any of the beef flavor. I did an indirect cook to 125, dome temp around 250. When 125 was reached, I pulled him off, removed the plate setter, got the egg up to a higher temp and pretty much seared him. He spent no longer than 10 minutes total at searing temps. I then pulled him off, foiled him and let him rest for about 20-30 minutes. We made a horseradish dip and devoured! It was bleeping awesome!

Thanks guys! SWMBO and I will celebrate 25 years this year and I am truly blessed. I told the boy that if he could grill and feed folks he would be a chick magnet
. He did take a picture of the turkey he smoked--I asked him to send it to me so I could post it.
