Firsts today: brisket, CyberQ, Pit Pal app

I just started my cook. I've got a 6.3-lb brisket on the Egg with mesquite chips. I'm using the CyberQ & fan I got for my birthday/Christmas (I can never tell which). I'm using Pit Pal on my iPhone to manage the controller. One hour in, I like the setup. Pit Pal nailed my target temp of 200 in a little under 30 minutes and cut the fan. I really wanted to get the cook started & didn't have time to sit around to see if it would overshoot, so I just added my brisket & chips. I set alarms in the app for Egg and food temp, and when I opened the lid, the low temp alarm sounded from the CyberQ. Pretty cool... but I guess I'd like it to sound on Pit Pal, too. If it did, I missed it.

I'm planning to mount the controller somewhere convenient, but I figured I'd try it first to work out any kinks. As of yet... there haven't been any. One thing I get with the fan that I didn't see before is a lot of my smoke coming out in the gaps around the bottom vent (photo below). I've heard of others using aluminum tape around those areas to seal things up, but that seems like it would be cumbersome when cleaning.

I'll post finished photos later. I took all of these photos with Pit Pal. I'm usually the guy that at least plays with all of the features of a gadget, whether or not I need to. So far, Pit Pal has more than enough features to keep me busy.

Egg temp just hit 195, and the fan is modulating now. Awesome. The smoke coming out of the bottom has definitely slowed. I'll post more photos later!

Oh, and I'm definitely putting these on the Egg a little later on.

  • Here's the temp chart after <1 hr. Fired up the Egg, got it to temp, opened the lid & inserted the food probe.

    Also, temps are creeping up. Now around 210.

    If the smoke is coming out only when the fan is running, don't worry about it.  Your vents are set so that the temp will go down when the fan isn't running ... top vent is almost closed ... yes?  Thus, when the fan kicks on, the restricted top vent setting causes back pressure in the egg that is relieved through the bottom vents.

  • Yeah, I might need to close the top vent more. It's open maybe 1/4-1/3 of the way. Temps are now 212, up from target over about 45 minutes. Brisket is now at 146.

  • Looks like you're off to a good start! I've thought about getting a temp controller myself, but just can't bring myself to spend the coin. 
  • I raised the Egg setpoint to 210 at noon just to see how it would respond. I've got to prep those onions in a little while & figure out how to place them. I might tent the brisket & place then on top.

  • Opened the lid at 1:00pm to peek. Raised setpoint from 210 to 250 at 1:15. Hit target at 1:25-ish. Raised lid to add onions, foil brisket. Took longer than I'd hoped. Put everything back together by 1:38pm.

    (basically taking notes now to give context to the graph later)

    Very cool, except for your weather which looks a lot better than my snow. I love gadgets but haven't gone in for the pit controller.
